James Beard famously said: "Food is our common ground, a universal experience.“ At Le Chateau, we are building on decades of culinary experience to introduce something altogether new.
Le Chateau, a beloved institution and landmark of the Westchester area’s dining scene, will reopen in fall 2017 exclusively for private events. After an extensive renovation and expansion, Le Chateau will offer an enhanced guest experience with a larger, modernized kitchen, ample bar and cocktail space, and an entirely new ballroom with sweeping views and soaring ceilings. As a part of Le Chateau’s renovation, we are assembling a new team of culinary talent, led by our Executive Chef.
Chef Tim Depelteau
Tim was born to cook. With natural talent passed down from his mother, Esther, Tim wound up following his older brother's footsteps in becoming a Chef.
While attending college at the University of Connecticut, Tim began his culinary career as a Line Cook at Blu in Hastings on Hudson. Soon after, he became a Sous Chef at Rulu's River Cafe in Stamford.
After graduating college, Tim spent 3 years at Shelly's on the River at the Hampton Inn in Stamford, where he was quickly promoted from Sous Chef to Executive Chef.
Most recently, Tim was the Executive Sous Chef for 5 years at the Hyatt Regency Greenwich where he oversaw all aspects of the kitchen, including banquet facilities, restaurant, bar and room service, and seasonal menu creation. He received the Tower Award in 2014 for exceptional work, and was named Manager of the Year in 2015.
Tim holds a certification from the French Culinary Institute for Charcuterie and Pâtés. He loves to cook with a Farm to Table style using locally grown ingredients. In his spare time, he enjoys dining at different types of restaurants to experience a variety of tastes. Tim is also an avid Star Wars fan and gamer at heart, who loves music and falling asleep to ESPN.

At every Elegant Banquets facility, the mission is the same: create menus that excite the palate, engage the senses and most importantly reflect the personality of our guests. To date, we have hosted more than 1 million guests at our venues. And while our heritage is important, our culinary team is constantly raising the bar and testing out new foods, presentations and station ideas. Le Chateau will join in this same culinary tradition of excellence and innovation.
